A 10 minute dessert that you cannot **** up | Semolina Pudding | Sooji Ka Halwa
Ingredients
Makes 6-8 servings: 3oz each
10 oz or 280 g semolina
11 oz or 310 g sugar
20 oz or 590 mL water (/hot water)
Almonds
Raisins
Cardamom seeds
1-2 tbsp Butter
2-3 tbsp Milk
Saffron (optional)
Edible Silver (optional)
Ghee (optional)
Cashew nuts (optional)
Pistachios (optional)
Semolina is called as Sooji in Hindi. This dessert has a different name in different states of India. Generally, this is called as Sooji Ka Halwa.
Method:
Soak few strands in 2-3 tbsp of warm milk. (20 - 30 secs in the microwave oven)
Roughly chop almonds (/cashews/pistachios) and saute them in a saucepan with ghee/butter for 1-2 minutes before adding raisins. Saute the nuts and raisins until the raisins balloon up. Be careful not to burn them.
Saute the semolina for 4-5 minutes until there is slight change in color.
Add the hot water, saffron milk and sugar to the saucepan. Keep stirring as you add the water to avoid the lumps of uncooked semolina. If you use hot water, it’s going to be splatter a lot initially - be careful.
Taste and adjust the sugar according to your taste.
Serve with edible silver, saffron strands and toasted nuts. (optional)
